Today, most people prefer having more fudge-like
variation to the cake-style brownie. But the condition was always like this.
The fact is the first brownie was always cake-style. It has been only in the
last 25 years that fudgy brownies overtook cake-style.
When Fanny Farmer invented the first brownie approx. 100
years ago, it was genuinely cake-like. Over the years, brownies made chocolates
as their major partner and thus they became richer and much thicker.
The second recipe was mentioned in Lowney’sCook Book written
by Maria Willet Howard and published by the Walter M. Lowney Company of Boston.
Further, Ms. Howard added Extra Square chocolate and an extra egg to Fanny
farmer’s recipe making a dense and more chocolatey brownie cake. Since then
adding more and more chocolate become a trend to get the fudgier brownies.
Fudgy and chocolaty brownie is still in vogue, and
today’s the most popular brown
sugar cake is Walnut Brownie.
